ABC Banana Chocolate Swirl Cake

Happy New Year!! The Avid Baker's are baking from The Weekend Baker this year. I am really excited about this. The entire title is:

The Weekend Baker: Irresistible Recipes, Simple Techniques, and Stress-Free Strategies for Busy People

And who does that not apply to these days? Stress free baking. I love it!!


Now, talking about stress free...well I was a tad stressed. First recipe of the year. First recipe from the new book. I had everything room temp. except the bananas. I had those in the freezer. I keep a supply because we like so many baked goods with banana. I waited until I thought they were room temp. As soon as I spun the mixer the butter froze and made a huge mess! Then the chocolate froze when I added that!!! Lumpy mess..I thought for sure the cake would not work.

But it did. And it was great. I did not use nuts..so I really slathered the pan before hand. I have learned from making my pumpkin roll that it is the nuts that keep the cake from sticking. Not using nuts you need to compensate.

The other difference was that it called for 40 minutes of bake time. I pulled it out after 50 minutes and probably would have gone another 5 or 7 minutes.

The cake was beautiful to look at with a wonderful flavor. The texture was spongy..could be the frozen batter!

Oh fellow ABCers, I did make last months cake-eggnog pound cake. I just never blogged it. Maggie and Joel loved it. I was reminded that I do not like eggnog.

Ah, that explains why my cake stuck a bit (I omitted the nuts too) which hasn't happened to me in a long time. Well, your cake turned out lovely even with the partially frozen bananas. And your eggnog cake looks great too. I don't like to drink eggnog (I found out - first time) but I thought the eggnog aroma was really nice in the cake :o) Happy New Year, Toni!!

Hi Virginia! A fellow ABC member here! I like your idea of incorporating the 2 batters in one bowl before pouring into the mold....the marbling of your cake turned out wonderfully! Mine was too segmented and blotchy LOL

Just following up on your comment to my blog, I'd LOVE to see your owl ornaments. Did you blog about them by any chance? Making ornaments was another thing I wanted to try this year but had a lot on my plate with my other projects.

My SiL sews and we want to try to do some sewing projects together...maybe ornaments next year! Would love to see your pics :)

p.s. I am a huge Jane Austen fan too :) Persuasion (with Ciaran Hinds) is one of my all time favorite movies.

Have you read any Georgette Heyer? She's really wonderful. The best I have found to rival Austen.
