Clementine Cake

What can I say? I made this cake because it sounded absolutely vile! Whole clementines cooked for hours and then peel and all processed to nothingness. My error- it was processed into a thing of wonder. This cake is excellent. The recipe is in Fran McCullough's The Best American Recipes 2001. What a great gift from my friend, Sarah (with an apron to boot!) And thanks to my creative husband for the snowflake.

I guess I'm going to have to trust you on this one... not a fan of clementines to begin with, so there's no way I'd make this cake.

That being said, I love your presentation!! Really nice job.
