Baby's Discoveries During Muffin Making

First and foremost I would like to say that no children were harmed in anyway or even exposed to salmonella during the making of these muffins. You can relax and read for enjoyment with no worries about the safety of our kitchen.

Baby finds a new way to whisk the dry ingredients.
Baby finds a new way to open butter.

Baby finds that muffin papers work just as well after being wadding up and thrown around.

Baby loves real gourmet food...and knows the difference between real maple syrup and that other stuff.
Baby can measure now! And wonders why we are not adding chocolate chips to these muffins.

Baby says these are great muffins and asks for another.

mmmm wonderful wholesome goodness with very little sugar.

Great Grains Muffins (source pg 9)

Whisk dry
1 cup flour
1/3 cup each whole wheat flour, cornmeal, old fashioned oats
1/4 cup sugar
2 tea baking powder
1/4 tea soda

Whisk wet
1 cup buttermilk
1/3 cup maple syrup
2 large eggs
1 stick melted butter

Combine dry and wet. May be lumpy. Add 3/4 cup dried fruits. I used golden raisens, apricots, and craisens.

Bake 18-20 minutes. Cool on rack 5 minutes.
