Zuni Corn Pasta

One of our favorite things to do in Radford is to walk. We live in a wonderful neighborhood called "plan A". There is rich architectural history in the area with regard to development of a beautiful, friendly neighborhood. Our plan A was used as an example for growing cities and towns countywide.
This tree is near our apartment and was one of my children's favorite climbing spots until new residents arrived. We love this tree and the memories we have of the street it lives on.
After a short walk this morning I wanted to make pasta for lunch and share this beautiful piece of our city. Here you are: Pasta and the Tree.


The benefits of infusing butter with herbs is the way the entire house smells! I love heating up the butter and then adding the spices before adding any other ingredients.

The Zuni Cafe is in San Francisco. The cookbook contains this recipe which is one of my favorites for simple and quick pasta.

I don't know which is more striking the pasta or the tree!


Recipe adapted from Zuni Cafe Recipe:
Pasta with Corn, Pancetta, Butter, and Sage
(I use bacon, canned corn, add garlic and onion)

1/2 lb bacon
1/2 stick butter
1/2 tea rubbed sage
1 can drained Shoepeg corn
Diced green onion
2 cloves garlic, pressed
1 lb thin spaghetti pasta

Cook bacon till crispy and crumble, set aside. Drain all but a tad of grease, add butter, sage, ground fresh pepper. Swirl until it smells wonderful. Add garlic and onion till soft, then add corn till hot. Taste for salt.

Meanwhile cook pasta. Keep 1/2 cup pasta water. Toss pasta with corn and add pasta water as needed. Top with fresh Parmagian cheese and a couple of fresh sage leave if you have them-which I usually don't.
