Wild Mushroom and Cheese Quesadillas Farewell

This was one of my last packing meals in Radford. I had put my books away and was living on paper and plastic when I just had to indulge and make something extraordinary. Wow did I find a great recipe.

This is a wonderful cookbook with some of my favorite recipes: Earthquake Cake and Gingered Sweet Potatoes.

Whirl your vinegar, olive oil, sugar, mustard, orange zest, OJ, salt and pepper.

Add cranberries, shallots, and jalapeno and pulse.

Add pecan just before serving.

In large pan melt butter and cook onions and mushrooms. Add worcestershire, garlic, and salt. Lastly add white wine and pepper.

Heat your tortillas.
Layer 1: Cheese

Layer 2: Mushroom Mixture

Layer 3: Feta

Fold

Enjoy

Even on paper plates and as a left over these were great. The flavors together really made your mouth sing.

Did I mention that I really really like this cookbook.

I would never think to make a quesadilla like this which is why I love your blog. You are so adventurous! It sounds like a great summer dinner. The heat is about to pan fry us. I went to a William Sonoma free cooking demo and let me say, it was good; roasted corn salad and frittata. I'll email you the recipes. And the tip about roasting one's own black pepper. Who knew it made a difference?!

Let me just say...you could fry these quesadillas in the yard here!! 110 degrees today. Perhaps I could roast my own corn salad right in the back yard too!!! I look forward to your recipes. I love that you share with me.

Oh my that looks good! Since my family would probably gag at the description of the recipe...you will have to make it for me someday when we are neighbors again. What? It could happen!
I can't even tell you how yummy it is. So get Josh to get a job in Kingman and we will feast!
