Pasta Serenity

 

I love pasta! I haven't dusted off the pasta machine for some time and as I was using it this time wondered, "Why?"
There is something soothing about the routine of flattening sheets of dough, over and over to get a thin sheet. Then satisfaction when the thin dough is put through and made into spaghetti. 


Pasta is comfort food at our house. We love it plain or with sauce. Sauce that is thin or chunky. We are not really picky. 

I love Giuliano Hazan's Thirty Minute Pasta cookbook. My girls love his Shells with Butter and Cheese recipe. It is our simple go to meal. Most recently we tried the Cauliflower and Pancetta Spaghetti.

My go to homemade pasta recipe is easy:

2 cups flour

2 cups semolina

1-1/4 cup tepid water

or

2 cups flour

2 cups semolina

pinch of salt

6 large eggs

2 TB olive oil

Mound the flours. Make a well. Add fluid or anything wet. Mix and Knead until elastic. Let rest at room temp for 30 minutes in tightly wrapped plastic. Roll and cut as you wish.

Boil in rolling boiling salted water for 3-5 minutes if fresh. 10 minutes if completely dry.
