Crockpot Apricot Jam

There are some blogs that are masterpieces. One Perfect Bite is one such website..Mary is a master author. I love reading her entries and end up drooling while reading. Everything I have made from her website is delish. The recipe for this jam can be found at One Perfect Bite. Thanks again, Mary, for a delightful new recipe.

It amazes me that such simple ingredients can make something so wonderful.

1-1/4 pound dried apricots
2 cups sugar
3-1/2 cups water

2 tablespoons lemon juice
1/2 teaspoon salt

And then with minimal stirring 4 1/2 hours later you have a masterpiece. (Add salt and juice after 2 1/2 hours)

mmm and the versatility of being able to store in fridge or freezer...

And this is one of the reason TOAST is my favorite thing for breakfast.
